Creamy Chorizo Carbonara

This recipe looks the part and tastes even better. It is ultimate comfort in a bowl. Creamy, with all the delights of eating noodles, but without the high blood sugar or bucket loads of insulin. Cooking with full fat ingredients, keeps the carbs low and the decadence high. Whoever you cook this for, won’t believe it is so low in carbs. In this recipe we have used courgetti but you could replace with something like konjac spaghetti.

Ingredients

  • butter (2 tbsp)
  • double cream (200ml)
  • chorizo (50g, chopped)
  • white onion (1 medium, sliced)
  • spring onion (1, sliced)
  • mature cheddar cheese (100g)
  • courgettes (2 large, noodles)
  • black pepper (pinch)

Method

  1. In to a deep pan, add the butter and melt over medium-high heat.
  2. Fry off white onion, spring onion and chorizo until soft and the chorizo crisping up. Reduce the heat.
  3. Add in the double cream, mature cheddar and stir through. Cook for a few minutes until it has thickened slightly.
  4. Add in cracked black pepper, your courgetti and stir through.
  5. Add some parsley on top and serve.

Notes

You can spiralise your courgette using multiple kitchen utensils. If you don’t have a spiraliser, you can use a vegetable peeler and peel down the length of the courgette so that you have tagliatelle style strips.edium heat. Make sure you are stirring the sauce throughout this entire process. Bring the sauce to the boil and then simmer for 5 minutes. While the sauce simmers, whisk the ingredients to help thicken the sauce.

Add the drained noodles to a pan and cook for 2-3 minutes. Add the prawns and asparagus back into the pan and mix everything together. Add the sauce (you may wish to use all of the sauce or half depending on how creamy you want your spaghetti to be) and mix everything together once again on medium heat. Season with extra salt and pepper.
Serve the spaghetti and garnish with parsley.

Drain the spaghetti and give it a quick wash with fresh water, and add to the saucepan. Cook for 2 to 3 minutes and then add in the crab and the fresh herbs for the last minute or so. Voilà!
